Falafel for lunch

Falafel, a nice gluten free, veggie option.

Most towns now have a kebab shop where you will easily find Falafel, but they are often coated in breadcrumbs which is ok for vegetarians, but not if you are gluten intolerant or Celiac. No worries, easy enough to make at home and I suggest you make a whole batch and freeze in lunch size portions for lunch another day.

Crack two eggs into a bowl, add a tablespoon of milk and mix together lightly with a fork. Add a dash of salt and pepper. Wilt a handful of spinach in the microwave for 30 seconds on high and put to one side. Thinly slices some feta cheese – I find 4- 6 slices does nicely. Turn on the grill on your toaster oven or broiler ready to grill the omelette after it is half cooked. Add a teaspoon of canola oil to a small non stick frying pan and preheat on your stove top. Add the egg to the pan and make sure it covers the bottom.Keep the temp at low to medium and stir a little with a wooden fork. When the egg is bubbling add the feta cheese. This next step is where you make a great looking omelette which is perfectly cooked – Remove from the heat and place under the broiler or in the toaster oven. Grill the omelette  for  few minutes  until the cheese browns and the egg looks solid. Remove from toaster oven or grill USING AN OVEN GLOVE. Add the pre wilted spinach from dish and  use the wooden fork to gently fold over the omelette and slide onto a plate. Eat as is or add asparagus or gluten free toast.

 

Fish for a healthy body

Teriyaki Salmon. Make sure it is wild salmon as the Omega 3 content is higher. Marinate in a Gluten free Teriyaki sauce then Grill. Not a fan of Teriyaki? Bake or steam (wrap in foil with lemon and pepper). Serve with a side of rice and tons of veggies for a very healthy Gluten free dinner that will make your arteries very happy. Enjoy 🙂
